Crispy Chicken Tikka Bowls

- Cook the chicken according to package instructions. Brush with tikka masala sauce and bake for an additional 5 minutes.
- While the chicken cooks, prepare the other bowl elements: mix the slaw, slice the cucumbers, and ready the pickled onions.
- To make the mint sauce, blend all mint sauce ingredients in a food processor until smooth or slightly chunky, based on preference.
- Assemble the bowls with cooked quinoa, coleslaw, cucumber, pickled onions, and chicken. Top with mint sauce. Serve immediately.
